Vegan Thai Green Curry
Lemongrass has always been a great addition in Thai food. Here's a vegan Thai Green Curry recipe for all you curry lovers!
Perfect, easy recipe to use for meal prep!
- Thumb-size piece of ginger
- 2 medium shallots
- 4 garlic cloves
- Fresh coriander, stalks and leaves
- 1 tsp ground coriander
- Organic dried lemongrass
- Ground cumin
- Ground black pepper
- Fresh green chillies (leave the seeds in for that extra kick)
- 1 tsp salt
- Sweet potato
- Red capsicum
- Firm tofu
- Soy Sauce
- Coconut milk
- Dried Wakame (In lieu of fish sauce)
Finely chop the shallots, garlic, ginger, chilies and the spices and sauté them in a tsp of cooking oil.
Once golden brown add in the soy sauce, dried wakame and coconut milk and let simmer.
As it thickens, add in the veggies and tofu. Let the veggies come to a semi-boiled consistency.
While it's simmering add in a semi-handful of dried lemon grass.
Serve it up with steamed bokchoy, brown/black/red rice and some fresh coriander. "One of my favourite meal preps yet!"
