Vegan Apple Crumble Banana Bread

Ginger is a widely used ingredient during this very merry time of year! You can add it into basically anything. Sweet Christmas-sy treats, savoury snacks or even wholesome meals!

Ingredients:

3 large and very ripe bananas, mashed

⅓ cup date syrup or 1/2 cup finely chopped dates

⅓ cup apple sauce

2 tsps small apples, peeled & diced

160 g (whole wheat) flour
-
100 g spelt flour
-
1½ tsps organic cinnamon powder
-
½ tsp nutmeg
-
¼ tsp organic ginger powder
-
1 tsp vanilla extract
-
2 tsps baking powder
-
½ tsp baking soda
-
½ tsp salt
Crumble topping
-
⅓ cup oats
-
⅓ cup nuts, chopped
-
2 tbsps coconut flour
-
1 tbsp coconut sugar
-
2 tbsps plantbased butter, cold and cut into small blocks

1 tsp cinnamon
Method:
This recipe combines the best of both worlds: apple crumble and banana bread!
- Preheat the oven on 180℃.
- Combine mashed banana, apple sauce, vanilla extract and date syrup in a bowl.
- In a separate bowl, combine flour, spices, baking powder, baking soda & salt. Mix well.
- Fold the dry ingredients into the wet ingredients, then add the diced apples. Do not overmix!
- Pour the batter into a loaf pan lined with parchment paper, let it rest for 15 minutes.
- Meanwhile, make the crumble topping.
- Combine all ingredients into a bowl. Use your fingertips to combine the butter with the remaining ingredients
- Sprinkle the crumble mix on top of the batter. Use your fingers to press it down gently.
- Bake the loaf in the oven for 50-60 minutes or until a toothpick comes out clean.
- Let it cool completely before slicing and serving.
