Vegan Apple Crumble Banana Bread

Ginger is a widely used ingredient during this very merry time of year! You can add it into basically anything. Sweet Christmas-sy treats, savoury snacks or even wholesome meals!

  • 3 large and very ripe bananas, mashed
  •  cup date syrup or 1/2 cup finely chopped dates
  •  cup apple sauce
  • 2 tsps small apples, peeled & diced
  • 160 g (whole wheat) flour
  • 100 g spelt flour
  • ½ tsp nutmeg
  • 1 tsp vanilla extract
  • 2 tsps baking powder
  • ½ tsp baking soda
  • ½ tsp salt
Crumble topping
  •  cup oats
  •  cup nuts, chopped
  • 2 tbsps coconut flour
  • 1 tbsp coconut sugar
  • 2 tbsps plantbased butter, cold and cut into small blocks
  • 1 tsp cinnamon


This recipe combines the best of both worlds: apple crumble and banana bread!

  1. Preheat the oven on 180℃.
  2. Combine mashed banana, apple sauce, vanilla extract and date syrup in a bowl.
  3. In a separate bowl, combine flour, spices, baking powder, baking soda & salt. Mix well.
  4. Fold the dry ingredients into the wet ingredients, then add the diced apples. Do not overmix!
  5. Pour the batter into a loaf pan lined with parchment paper, let it rest for 15 minutes.
  6. Meanwhile, make the crumble topping.
  7. Combine all ingredients into a bowl. Use your fingertips to combine the butter with the remaining ingredients
  8. Sprinkle the crumble mix on top of the batter. Use your fingers to press it down gently.
  9. Bake the loaf in the oven for 50-60 minutes or until a toothpick comes out clean.
  10. Let it cool completely before slicing and serving.
