Ginger Sandwich Cookies

(makes 4 cookie sandwiches) ⠀
• 1 cup milled almond flour ⠀
• 1 tbs butter ⠀
• 1/2 an egg or small flax egg (1/2 tbs ground flax with 1 1/2 tbs water)⠀
• 1/2 tsp vanilla extract⠀
• 1 Tbs liquid sweetener (I used honey)⠀
• 1/2 tsp baking soda ⠀
• sprinkle of cinnamon
• 1tsp @dhownaturefoods ginger powder⠀

Cookie Sandwich filling ⠀
• 1 tbs cream cheese⠀
• 1 tbs Greek yogurt⠀
• 1/2 tbs honey ⠀

Mix all the cookie ingredients together and roll into balls, press gently to create a flatter shape. Bake at 180 degrees for 10 minutes. These cookies will come out fluffy, spongy yet crisp on the outside 🤩⠀

Once the cookies have completely cooled, fill it with your cream filling. I also chilled my cream filling before putting it on the cookies. ⠀
